We use a mix of heirloom cornmeal from Granor Farm and Janie’s Mill along with organic rice flour for the muffin base, and then fill it with poblano and jalapeno peppers for some kick and a bit of cheddar cheese for a topping. Made with gluten-free ingredients, but not in a gluten-free facility!
